Puffed Rice Upma

Puffed rice is a kind of puffed grain made from rice, known by many names like Pori, Muri,Churmure and so on. It is used mainly in snacks and now I have come to know that they are also used in cereals. I don't make much with this, and when I see the huge bags of puffed rice at the grocery store, I usually turn, thinking that I am not going to be able to finish it. And then I tasted a kind of a upma ( I don't know whether they call it upma) at a friend's place, I thought I should make something with it and got this big bag of puffed rice. I made it for breakfast, and now I know why they come in such huge bags, I used 10 cups of it to make upma for three. The upma turned out to be really good, give it a try..

Need To Have
  • Puffed Rice - 10 cups
  • Peanuts - 1/4 cup
  • Onion - 1 medium chopped
  • Tomato - 1 big chopped
  • Green Chillies - 3 sliced
  • Grated Ginger - 1 tablespoon
  • Turmeric Powder - 1/4 teaspoon
  • Mustard Seeds - 1/4 teaspoon
  • Cumin Seeds - 1/4 teaspoon
  • Curry Leaves - 5 or 6

Method
To a big pot of water, add the puffed rice, initially it'll be floating on the top, after a couple of mins, it will settle down (not sinking). Now remove it and squeeze out the water, it should not have absorbed much water and it will be separate, not sticking to each other. Now, heat some oil, add the mustard and cumin seeds, when they start spluttering, add the peanuts and roast them till they change color. Then add the green chillies, curry leaves and onions, saute till onions turn transparent, add the tomatoes and saute well along with the turmeric powder and salt, When the tomatoes have turned mushy, add the puffed rice, mix everything well and serve it garnished with some chopped coriander, I didn't have it that day so I left it out.
Sending it to Cuisine Delights for the Spotlight - Healthy Breakfast Ideas event and
to Divya's Culinary Journey for Surabhi Nayak's Let's Party - Breakfast event.
Note
When you put the puffed rice in water it shrinks in size, so 10 cups is not much.
If you like it spicy, you can add finely chopped green chillies instead of sliced ones.
Also, you can add some grated coconut along with the coriander, it would taste even better.
