My family likes savory sandwiches, when I am tired of making the regular cucumber and tomato sandwich, I try to make something with a different filling. Carrots and paneer make a nice combination, even kids ( like my daughter ) who don't like carrots will like this because of the paneer, but I have not added too much of it, just enough to give that delicious creamy flavor. If you have your paneer ready, either homemade or store bought, the filling can be done in about 5 minutes. Actually I had started making bread rolls with the filling, but the bread slices turned out to be a little dry and crumbly, rolling them was difficult, so after making four rolls I ended up making the sandwiches. Sandwich or rolls, they both tasted very delicious, can have it either for breakfast or as an evening snack..
Need To Have
- Grated Carrots - 1/2 cup
- Grated Paneer - 1/4 cup
- Green Chilly - 1 small, slit
- Onion - 1 medium, chopped
- Chopped Coriander - 1 tablespoon
- Garam Masala - 1/4 teaspoon
- Bread Slices
- Salt to taste
Method
Heat some oil, add the chopped onions and slit green chilly and saute till the onions turn transparent. Add the grated carrots, salt and saute for 5 minutes.
Now add the grated paneer and mix, finally add the garam masala and chopped coriander and remove the chilly pieces before using it.
Now for making the rolls, trim the edges of the bread slices, roll it slightly with a rolling pin and spread some filling.
Then roll the slice carefully and adding some oil, shallow fry or toast it till golden on all sides.
For the sandwiches, just spread some filling between two slices of bread and toast it in a little oil or butter, till golden on both sides. They taste delicious as such or serve it with some tomato sauce.
Note
You can chop the chillies finely and add it to the filling for a spicy version.
You can make 2 sandwiches and 3 rolls, depending upon the size of the bread slices.
