Cabbage Briyani, Muttakos Briyani


          The last couple of weeks has been so busy, can't spend much time with my blog, today I had made up my mind that I have to do a post. I had made this Cabbage Briyani or Pulao couple of weeks back, it came out very well, very flavorful, I also used some fresh raw peanuts in it instead of the usual green peas, it gave a nice different taste to the rice. Serve it with some raitha for a complete meal..

Need To Have

  • Basmati Rice - 1 cup
  • Fresh Raw Peanuts - 1/2 cup
  • Shredded Cabbage - 4 cups, big pieces
  • Tomato - 1 medium
  • Onion - 1 medium, chopped
  • Yogurt/ Curd - 2 tablespoons
  • Lemon Juice - 1 tablespoon
  • Turmeric Powder - 1/4 teaspoon
  • Garam Masala Powder - 1 teaspoon
  • Cinnamon - 2" piece
  • Cloves - 3
  • Black Cardamom - 1
  • Chopped Coriander - 2 tablespoons
  • Salt to taste

To Grind

  • Shallots - 5
  • Garlic - 5 cloves
  • Chopped Ginger - 1 tablespoon
  • Grated Coconut - 2 tablespoons
  • Fennel Seeds - 2 teaspoons
  • Coriander Seeds - 1 tablespoon
  • Green Chillies - 3

Method


          Soak the basmati rice for 30 minutes, grind together all the ingredients given under 'to grind'.


          Heat some oil and ghee, add the cardamom, cloves and cinnamon, when it starts sizzling or when the cloves starts popping, add the onions and saute for a minute. Then add the peanuts and mix for another minute and then add the ground paste.


          Saute for 2 to 3 minutes, till the raw smell goes away, then add the chopped tomatoes, curd, turmeric powder and lemon juice and mix for one more minute. Add the cabbage pieces, garam masala powder and mix well, then add the drained rice and mix for another minute.


          Then add about 3 cups of water, salt, when the water starts boiling, reduce the heat, cover and cook till the rice is done. Once the rice is done, add the chopped coriander, switch off, cover and leave it for about 10 to 20 minutes, then serve it warm with some raitha.


Note
You can use only oil but a little ghee gives a nice flavor.
Can use dried raw peanuts, soak it and add, or can use cooked chickpeas too.
